In this engaging live online crash course, you will learn the rewarding process of making fresh, silky mozzarella from the comfort of your home kitchen. After completing this activity, you will have the skills to create the perfect homemade topping for pizza, pasta, and all your other favorite Italian dishes.
Your Group Will:
- Discover the science of coagulation, understanding how milk transforms from fluid to firm curds
- Watch a professional demonstration showing exactly how mozzarella is made
- Roll up your sleeves and practice turning curds into beautiful balls of fresh mozzarella
You will also learn the crucial steps for selecting the right curd, maintaining proper water temperature, determining the correct amount of salt, and mastering the pulling and folding technique to create your own authentic Italian mozzarella.
No prior experience is required to successfully complete this class.
Materials Needed to Participate Fully:
- 1 teaspoon rennet in either animal or vegetable form, tablet, or liquid
- 1 teaspoon citric acid
- 1 gallon of organic whole milk. Important note: do not use ultra-pasteurized milk. Homogenized milk is fine.
- A stovetop burner or alternative heat source for cooking
- A sauce pot with a well-fitting lid, sized to hold a gallon of milk
- A colander with small holes or a fine mesh strainer
- A liquid thermometer for accurate temperature monitoring
- A large mixing bowl that your colander will fit into
- A sauce pot for heating water, approximately 2 quarts capacity, or an electric kettle
- Any knife that will cut through soft curd
- A slotted spoon
- Rubber gloves, recommended if your hands are sensitive to heat
- Ice for the ice bath at the end of the process
