  • Brings a lot of information about sushi techniques, althought in my own experience i cut the sashimi on the other side, as the chef said, this could help people to take care about the cuts, in my case i preffer on doing it on the plain face of my Yanagiba facing myself so i know exactly where the cut is, i hope to visit, chefs restaurant in NY someday.
