- 1 small bay leaf
- 3 ½ pounds (1.6 kg) collard greens or curly kale (about 3-4 large bunches)

- 1 pound (450 g) red onion (about 2 medium)
- ⅓ pound (150 g) red bell pepper (about 1/2 large)
- ⅓ pound (150 g) yellow bell pepper (about 1/2 large)
