Syllabus

  • Week 1: Module 1: Ayurceutical Foundations & Traditional Food Wisdom
  • Week 2: This module introduces Ayurceuticals as a bridge between Ayurveda and modern nutrition. Learners explore the concept of Rasayana, distinguish functional foods from nutraceuticals, and understand Prakriti-based food design. The module also covers Guna–Rasa–Virya mapping for product ideation and its relevance in today’s wellness-driven economy.
  • Week 3: Module 2: Bioactive Ingredient Science & Functional Formulation
  • Week 4: Focusing on Ayurvedic herbs and phytonutrients as functional actives, this module covers ingredient sourcing, bioactive extraction principles, solubility challenges, and the role of natural polymers. Learners gain practical insight into standardization and formulation pathways used in functional food development.
  • Week 5: Module 3: Nanoencapsulation & Delivery Systems in Food Innovation
  • Week 6: This module addresses strategies to enhance stability and bioavailability of Ayurceutical actives. Topics include nanoemulsions, microencapsulation, liposomes, and biopolymer carriers such as zein, chitosan, and starch, supported by formulation case studies involving moringa, ashwagandha, and curcumin.
  • Week 7: Module 4: AI & Computational Approaches in Product Optimization
  • Week 8: Learners are introduced to the application of artificial intelligence and computational tools in functional food design. The module covers machine learning for formulation stability, predictive analytics for nutrient degradation, AI-assisted recipe development, and computational approaches for process understanding and optimization.
  • Week 9: Module 5: Food Testing, Shelf-Life Prediction & Quality Analytics
  • Week 10: This module focuses on laboratory and virtual quality assessment techniques, including sensory profiling, texture and color analytics, accelerated stability testing, and AI-based shelf-life prediction. Regulatory readiness and quality assurance aspects relevant to FSSAI and AYUSH frameworks are also addressed.
  • Week 11: Module 6: Sustainability & Smart Packaging for Functional Foods
  • Week 12: Emphasizing environmentally responsible innovation, this module covers bio-based and biodegradable packaging materials, smart labeling and traceability, nano-sensors, waste valorization, and circular economy models for functional food and Ayurceutical products.
  • Week 13: Module 7: Entrepreneurship, Innovation & Market Translation
  • Week 14: This module guides learners from concept to commercialization. Topics include startup ideation, product validation, prototyping, AYUSH A-Hub and Startup India pathways, funding mechanisms, intellectual property basics, branding, and go-to-market strategies.
  • Week 15: Module 8: Employability & Industry-Ready Skills in Ayurceutical R&D
  • Week 16: The final module bridges academic learning with professional application through industry-linked case studies. Learners develop skills in applied project design, technical documentation, professional communication, and career mapping for roles in nutraceuticals, functional foods, and wellness technology.
