Overview

Join this course to discover a variety of new and delicious sourdough recipes. Once you have a sourdough starter or culture, the possibilities are endless!

In this hands-on class, you will learn how to use your starter to create a wide range of baked goods, including bagels, fruit and nut loaves, focaccia, and cinnamon rolls. You will practice shaping, scoring, and folding techniques with baguettes, batards, and artistically scored boules. You'll also master the timing and maintenance of sourdough, even with whole grains, and for high-hydration doughs, such as ciabatta. Additionally, you’ll have a forum to address your sourdough questions and troubleshoot common bread-making issues related to ingredient variations and weather changes.

Since this course covers several advanced techniques, we recommend that you have some prior knowledge of bread-making before enrolling.

You will bake the following naturally leavened products:

  • Focaccia and/or Ciabatta
  • Cinnamon Rolls
  • Bagels and/or English Muffins
  • Fruit, Seed, or Nut-studded Batards and Boules
  • Baguettes
  • Artfully Scored Artisanal Whole Grain Loaves
You will understand the following sourdough baking concepts:

  • Levain, preferments & starter
  • Hydration
  • Dough handling techniques
  • Enriched dough
  • Discard
  • Inclusions (nuts, seeds, olives, etc.)
  • Shaping
  • Scoring
  • Fermentation and proofing

What you'll get

Knowledge required

We recommend that you already have some experience with sourdough baking. We offer a separate beginner's class for newbies.

What to bring

To drink, we serve water and tea only. Guests are welcome to bring other beverages of their choice. Please wear comfortable closed-toe shoes and tie back long hair.

Suitable for

Suitable for adults, and kids (minimum 12 years old).

An adult must accompany any attending kids, and must pay for a separate ticket.
